A Comforting and Delicious Mushroom Recipe

Mushrooms are a great comfort food and this recipe is both delicious and easy to make.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 8 ounces sliced mushrooms
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh parsley

Instructions: 1. Heat the oil in a large skillet over medium heat. Add the onion and mushrooms and cook until the vegetables are tender, about 5 minutes. Add the garlic and cook for an additional minute.2. Add the broth, thyme, rosemary, salt, and pepper to the skillet and bring to a boil. Cook for 5 minutes or until the vegetables are fully cooked.3. Divide the soup among four bowls and top with sour cream and parsley before serving.

This is a really easy and delicious way to cook mushrooms. They are baked in a creamy sauce and then served over rice or pasta.

Ingredients:

1 pound mushrooms, sliced

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon Dijon mustard

1 garlic clove, minced

Salt and pepper to taste

Instructions:

 Preheat oven to 350 degrees F (175 degrees C).      In a large bowl, combine the mayonnaise, sour cream, Dijon mustard, garlic, salt and pepper. Stir until smooth.     Add the mushrooms and toss to coat.     Spread the mushrooms in a single layer on a baking sheet. Bake for 25 minutes, or until tender.     Serve over cooked rice or pasta.

-1/4 cup of soy sauce

-1 tablespoon of rice vinegar

  3. Add the mushrooms to the mixture and toss to coat well.

  4. Spread the mushrooms in a single layer on a baking sheet. Bake for 20 minutes or until tender. Serve hot.
